My granddaughter is obsessed with Darth Vader. She thinks he is the bees knees. So when I was looking for a something simple to bake with her, what could be better than easy vanilla cookies cut into the shape of the dark man himself.
The cutters you can buy from eBay and other baking shops online, and you can use butter if you want – we used margarine because of allergy considerations.
INGREDIENTS
- 125g margarine ( or butter)
- 1/3 cup sugar
- 2 teaspoons vanilla
- 1 cup plain flour
- 1/2 cup self raising flour
- 1/3 cup self raising flour extra
- 1/4 cup icing sugar
METHOD
- Pre-heat the oven at 190 C and line a flat baking tray with baking paper
- Cream margarine, sugar and vanilla with a wooden spoon
- Slowly mix in the plain flour, a little at a time
- Add the self raising flour and mix
- You will probably need to mix in the last of the flour by hand, rolling the dough over into the flour as you go
- Roll into a ball and place into the refrigerator for about 20 minutes
- Dust a well cleaned bench with the extra SR flour
- Place the cookie dough onto the floured bench and roll out to about 3mm in thickness (not too thin)
- Dust with icing sugar by putting it in a sieve and shaking it over the rolled dough (this is necessary if you are using cookie cutters with a stencil pattern press – we tried without and the dough just stuck into the grooves of the faces of our Star Wars characters)
- Using a cookie cutter, cut out the shapes of the cookies and place on the baking tray
- Bake for about 15 minutes – watching that they don’t burn
- Cool before eating
- These will keep in an airtight container for a week (good luck making them last that long)
